Raw vegan carrot cake

Carrot cake has to be an all time favourite, but like all the best foods it's not that great for the figure. Admittedly this isn't as cheap as I'd like it to be, but it's vegan and raw which is pretty interesting! As moist, cake-like and sweet as the real thing yet without the flour, sugar, eggs or butter. If you weren't intrigued by the title I bet you are now.


Ingredients
2 carrots                                                                     
100g cashew nuts
50g dried dates
50g dried apricot
50g dried coconut
1tsp cinnamon
1/2 tsp nutmeg
A pinch of salt


Method
  1. Prepare an 8 inch square tin by lining with parchment.
  2. Grate the carrots then blend together with the cashew nuts, dates and apricots in a food processer.
  3. Add the remaining ingredients and blend.
  4. Push the 'dough' into the tin and leave in the fridge for a minimum of two hours to leave to set.
  5. Cut into squares and serve!



In hindsight I should've made a frosting too...
